Pumpkin Palooza Anyone?
Ready or not…… FALL is here and everything pumpkin is calling our name-especially recipes! In our pursuit of some fresh delights, we discovered a new “cup of joe” appropriately named Pumpkin Spice Cashew Coffee.
Real healthy food blogger Simply Sissom posted this delicious pumpkin coffee made with her simple “make ahead” Salted Pumpkin Spice Syrup. Believe us, this is yummy stuff!
PUMPKIN SPICE CASHEW COFFEE RECIPE-
1/4 cup unsalted roasted cashews
1/2 – 1 Medjool date, pitted and chopped (amount depends on sweetness desired)
1 tsp salted pumpkin spice syrup
12 oz. coffee (1 1/2 cups)
To the jar of a high speed blender, add cashews, date pieces, salted pumpkin spice syrup and coffee. Blend until smooth. Serve immediately.
